I made this last week and would suggest that this quantity would serve two, so gross up as required. Unfortunately, I forgot to take a photograph, so I guess I will be making it again soon!
2 Tablespoons of Pudding Rice
2 Tablespoons of Sugar
1 1/2 Pint of Milk
Nutmeg – as Required
Add the Rice, Sugar and Milk to an oven dish and sprinkle with Nutmeg. Cook on a low oven (about 140) for 1 1/2 hours, stirring regularly.
Serve with a dollop of Jam!
Note: You can add Raisins or such like if you prefer, as well. Cover with a lid if you do not like a skin and add more Milk if it becomes too thick. Also, increase oven time if required.
