4 Eggs + 1 for glazing
1/2 Pint Water
Put the water and butter in a saucepan and heat until boiling, whilst adding the flour and stirring continuously until a thick paste is formed. Remove from heat and add each egg one at a time, mixing in well and heating through before adding the next.
Line a baking tray with greaseproof paper. Scoop 1/2 a tablespoon of mixture and place in oval form on the tray and continue with the rest of the mixture making sure the ovals do not touch.
Brush with egg and bake in a moderate oven for about 30 – 35 minutes. When done they will be light and hollow. Make a hole in the middle and fill with jam. When cool, ice the tops and leave to set.
